Brown Sugar Cane:

Brown sugar cane is a sucrose sugar product with a distinctive brown color due to the presence of molasses. It is an unrefined soft sugar consisting of sugar crystals with some residual molasses content (so-called Molasses Sugar). It is a traditional uncentrifuged sugar consumed in Asia. It is a concentrated product of cane juice without separation of the molasses and crystals, and can vary from golden brown to dark brown in color. It contains up to 50% sucrose, up to 20% invert sugars, up to 20% moisture that shows it made up of other insoluble matter, such as wood ash, proteins, and bagasse fibers.

Historically, the sugar cane cultivators used crushers which were oxen driven. Nowadays all the crushers are power driven. These crushers are located in fields near the sugar crop. The cut and cleaned sugar cane are placed into the crusher for extraction and the juice collected from it was placed in to a huge tank for cooking procedure.

The juice are about to cook for an hour until the dried wood pulp separate from the crushed sugar cane. While continue cooking lime has to be added to separate the fiber particles and removed from the top surface. After skimmed off the thickened juice reduced to nearly one- third of the original volume. This hot liquid turns to golden color and stirred continuously until the textures will forms like thread or drips drop wise while falling. After the procedure it is poured into a shallow flat bottomed concrete tank to cool and solidify. The tank is large enough to allow only a thin coat of this hot liquid to form at its bottom, so as to increase the surface area for quick evaporation and cooling. After cooling down the soft solid which is now pressed into the desired crystal like pieces.

The quality of the sugar is judged by its color, brown means higher of purity and golden-yellow implies relatively pure. Some company practices of adding color or harmful chemicals to simulate the golden color, yet it will be identified though aroma scents, if thus have aroma means pure and urine smell are mixed with chemical mixtures.

Dried Banana Chips:

Chifle is a side dish, snack food, or finger food of Peru and Ecuador, consisting of fried slices (chips or crisps) of green or ripe plantain. Chifle is not to be confused with banana chips. Early 19th-century travelers on ships entering and leaving the port of Guayaquil were served Chifle (instead of bread) with meals, including breakfast, and discovered its use as a snack food.

In Peru chifle is typical of the Piura Region. Chifle is traditionally fried in wood-burning stoves with wood of the algorrobo blanco (a species of mesquite tree), which gives chifle a special aroma and taste. Depending on the type of plantain (ripe or green) the flavor can be sweet or savory. Sometimes it is served with cancha serrana (pan-roasted maize) or shredded cecina (pork jerky).

The variety of plantain used in Ecuador for some culinary compositions is called \"dominico\", either in honor of the Orden de Predicadores or because the name was passed from Santo Domingo (the capital of the Dominican Republic) to the coast of Ecuador. Chifle is made with green domingo plantains. Chifle is often served along with mazamorra or as a side dish with caldo (soup), especially beef caldo. Chifle is often served with ceviche (a seafood dish), which is also always served with maize roasted in shortening.

Jzartrax – Enterprises (TRAZO) – regenerate more crispy variety of chifle which is prepared and packaged in factory. This includes unique blend of sweet & savory with mint taste which in fact travelers and tourists were very much interested and keep visiting our country and buying for volume. The commercial production was exported currently in Japan, Korea & United States.
